I have made bernaise sause with ease as well as chocolate mousse using this pan.
One thing I think you will like is that the ceramic insert is easy to clean, even with melted chocolate on it.

The difference in making a sauce in this PORCELAIN insert double boiler and just a metal one is incredible. The keys are that the insert is not in the water and that it is made of heavy porcelain which is gentle on the sauce. No more mediocre bearnaise in this house! An added bonus is that it looks great.

Known as a Bain Marie in France (which translates to "Mary's bath" or "water bath"), this 0.8-quart double boiler delivers subtle yet steady heat to delicate foods such as chocolates, custards, sauces, or cheeses. The gentle process keeps sensitive recipes from scalding or over-heating, thus preserving their elegant flavors. The Bain Marie works by stacking two pans together on the stovetop. The lower pan simmers water directly over the burner, while the upper pan holds the chocolate or cheese over the steam heat. As with all Mauviel Cupretam Pour la Table cookware, the pans are made of thick copper, with a unique hammered exterior that gives the pieces a weathered, timeless appeal. By contrast, the interiors of the pots are lined with washed tin, a non-reactive material that resists sticky foods and cleans easily. These two pans also include porcelain inserts, which further diffuses and stabilizes the heat, making this one of the gentlest and most effective double boilers on the market.
